Cookin’ Keto- Cashew Zoodles with Spicy Thai Peanut Sauce
Another HOME RUN KETO CREATION! Fresh from the garden, spiralized zucchini with homemade Spicy Thai Peanut Sauce. Next time I’ll add some red pepper strips for color but this tasted DELICIOUS! Lots of Zucchini & Yellow Squash, spiralized 1/2 cup coconut oil 3 TBSP Garlic, minced 1/2 cup cashews 1/4 cup apple cider vinegar 1/4 cup soy sauce 1/2 cup Szechuan Sauce 1/4 cup peanut butter Reserve the spiralized zucchini/squash. Combine the rest of the ingredients over medium heat for 4 minutes & garlic is fragrant. Toss in Zoodles to coat. Serve and enjoy.
